What is Pisco? It is a colorless liqueur. Commonly known or referred to as the Peruvian brandy.

Pisco has its origins with grapes brought by Spaniards to Peru in the fifteenth century. The Spaniards originally made wine for their Catholic ceremonies. And, I am sure to satisfy the Spanish monarchy, by keeping a full cellar. This last part is my take on the history of Pisco. By the sixteenth century, Peru’s wine production surpassed the one from the old world. It became so high. To the point where; it became a threat to the Spanish homeland production. Because of this, the Spanish crown imposed high taxes on all products coming from Peru. I guess this backfired on the monarchy.

During the seventeenth century, Peruvians came across a new way to cut the entire wine process. By doing so, they started a new type of liqueur; The Peruvian Pisco. This was a product to avoid paying high taxes to the Spanish crown. Chile is also a producer of Pisco. And, also, Bolivia has its own type of Pisco; called Singani. This liqueur is sweet compared to the Peruvian and Chilean Piscos when taken straight up.

Our goal is to make Pisco known worldwide. So, it can get the recognition it once had. In this, Short Guide to Pisco; there are fifteen Pisco Cocktail Recipes. We invite you to give them all a try.
